I usually have my HVAC set to the lower vents under the dash for most of the year cause I use ac as little as possible and use the lower heat during the winter.
it was our first 90* day the other day so I swiched it to the far left (recirculate AC) and everything went fine.
the next day it rained and was humid so I tried to set it to the far right (defrost only) but it wouldn't go.
now it will only let air out of the upper dash vents and not the lower ot defrost vents at all. when I try to set it to the far left or far right the vents don't go and the knob literally snaps back towrd the center.

You've got a jammed cable or switching assembly... the 95-02 cars used a vacuum system to open and close the various doors... the 03-05 uses a second cable for the doors... I don't know exactly how it works, but it feeds off the back of the HVAC panel up to the heater box... check it out from below, and see if you've got a busted or jammed cable first. Beyond that... I have no idea.
