I start the car and any time I hit the gas a little hard and let it off the idle will drop to like 1200rpm and then down to like 750 rpm...almost like a dying motion but it goes back up after..What is causing this problem?

do u have an aftermarket intake sounds like ur sensor that goes in your intake to me..
nope no intake...engine is totally stock still IAT sensor? How do you test it?
Could also be the IAC (intake air control) valve. If it's slow in activating, you'd have similar problems. Mine was seriously carbed up a while back. After removing it, I scrubbed the orafice it goes into, and the valve itself, with an old toothbrush and carb cleaner. Put it all back together and turn the car to ON only, don't turn it over!! After 3 ONs, then it should've reset itself. Car should be OK to go then.
My car also does this same sort of thing, when the car is idling around 1000 if I tap the gas when it comes back down to idle it will sink to about 500RPM for a second or two and then reset itself at 1000. Now the funny part is, if I have any type of load on the system, such as the A/C on, it will not do this. Also sometimes without the AC being on it will stall right out at a stop sign, or atleast sink down to about 500RPM until I've stopped for a second or two. Makes for a really rough drive as the power steering pump starts to cut out as the car almost stalls. I have a canadian 2002 Z-24 with the Ecotec, 5 speed.
maybe fuel pump for 02ecoz... im getting a similar problem i work at a dealership n they tell me in my fuel pump but it wasnt replaced long ago although im sure it oculd of possibly went before. I changed my fuel filter i still need to do spark plugs. Mine is onl when cold.. if i hit the gas it like bogs out n wont go barely but if its warm it always works fine i have no idea what it is.. i have an aftermarket intake and thinking it could possibly be the sensor ive pissed with it alot.. sensor or spark plugs is kinda what ive narrowed it down to?
Mine also did this, first thing I did was gave it a full tune up, which helped with the bogging down, then the vaccum line on the MAP, then IAT, and runs great now.

Had the same problem, after a full tune up, replacing the MAP and its vaccum line, and IAT sensor, all is good
