I was wondering what other parts other the the HU itself do I need to install?
and the biggest factor,
does it fit into my '03 Cav?
yes they have double din kits for the 03-05 cavs. just get the wiring harness and the dash kit.

Another question, how hard is it to install the HU, being the first time to ever install one?
not to hard just match up the wires from the head unit to the colors on the adapter harness and that should do it but if you want to keep your factory door chimes you are going to need a special harness walmart has these for about 40 bucks installed one on my friends cav
o and one more thing when you connect the wires solder the wire and use shrink tubing that way no wires will work them selfs loose when putting int he dash best to do it this way and not with butt connectors
Yeah i would solder them and put shrink tubing over the joint. Thats what I did and have had no probs.
