I am having my CF hood cleared because where I work we have a paint booth and I work with 3 former body guys, and I got it all wet sanded and ready. But the guys I work with all have different ways of sanding before paint and I have never seen any of there paint on cars and I don't know enough to know which will look the best. 2 of the guys say to just wetsand with 1000 grit then paint it, the other guy says before clears he always uses 800 grit on the DA, then probably some buffing after either way. But will both ways turn out the same or will one way look better? To me 800 seems kinda rough to paint over.

i think either would work. i think personally i would feel more comfortasble with the 1000 then clear.
but as far as 800 being to rough to paint over.........i know people who in certain instances paint over 320 with no issue. but not over cf
320 and painting over is USUALLY when you're doing a base/clear, not just clearcoat
Typically when you're just clearing something, 1000 is the better way to go. IMHO
However, different painters have different styles... that doesn't necessarily mean there's a totally right and totally wrong way to do things... as long as the end result is the same and is the desired end result.

I really enjoy paint questions, as I enjoyed painting MUCH more than body work... (with the exception of the really stupid paint questions or people saying "I have no clue what I"m doing, can you give me an online tutorial?" without looking at the darn sticky I took so long to write up on WHY you can't be taught on the internet lol)
There's been a question or two I haven't answered because it was so dumb if I DID answer, it'd be some sort of smart arse remark that could get me warned or banned (over 5 years on the org, I haven't been warned or banned once... amazing I know LOL. I did come really close once though)
And, I have answered your question... sorta... hopefully... well you'll see what I mean LOL. Would have answered you sooner, but you caught me just as I was taking a break to clean... now i'm taking a break from cleaning LOL

i say the 1,000 for clear is perfect, for just re clearing the panel, preping a panel with primer, then prep the primer then finish with 800 then a red or grey scuff pad
complete primed panles i finish off with 600 then grey pad
remember the finer the paper the less scratches you will see in the base and clear
sometimes i will prep in 1,000 and a grey pad,, or sometimes i use 3m`s prep`n` blend liquid with grey or red pad
everyone has there own way but for you dude 1,000 for clear is just fine
