Rims, Tires, and rubbing?

Ok I'm looking at a rim kinda like this...

rims are like voodoo to me (I spend most of my time under the hood) but I REALLY like em, and need something to set off my car.. I'm going to be keeping pretty much stock ride height.. my question comes down to this...

With a rim so big, if I just get a low profile tire etc etc etc, will I have rubbing concerns? I DO NOT want this crap to rub, I want it to fit right, and I'm not sure how I achieve all this... but I'm assuming with the right profile tire it wouldn't be an issue?

There will always be someone faster than you, but thousands slower and dumber than you.
