Putting an AC delete on my 98 2.4. Can I remove the accumulator as well since I technically wont be using it anymore?
I would take it all out if you are deleting the system.
Yup, do so.
The more weight out of the car, the quicker the car will seem.
Power to weight ratio and weight reduction go hand in hand.

What else can be removed? I'm thinking about getting rid of of all the heating/cooling altogether as its just a summer car.
You could bypass the heater core, and take all that out too. Very easy, just look at it. Maybe put a big in-dash gps/dvdplayer in the controls and radio slot.
