What is the maximum fuel pressure that the eco fuel system can run? Assume an upgraded racetronix pump and boost referenced FMU with idle pressure set to 45 PSI. Is 100 PSI pressure max possible? Isn't that kind of pressure bad for the injectors?

The stock pump will hit its pressure relief in the 80 to 85 PSI range.

what about the racetonix pump? What is a reasonable pressure to run at idle - is 40psi too low?
Here's something I found on the Walbro 255's (which iirc, the racetronix is just a modified 255, though it may be the 190):

I think the first limiting factor will be how much fuel do you need at redline...add 20-30% factor of safety, find the fuel pressure that it can deliver that at and go from there. The next limiting factor will be the lowest and highest pressures that the injectors can operate at.
I see no issues with the idle pressure being 40 psi as long as it's tuned correctly. For the high side I wouldn't want to push the injectors past 80psi just for longevity reasons.

Can't speak for that product, but I'll bet its upper pressure limit is similar to stock.
Sure, 40 PSI is fine for idle. 30 or even 35 is doable, provided the injector isn't ginormous.
