How needed are they? My spare cam cover has a -10an fitting it in and i was advised by the shop to remove the baffles to ensure that all the metal shavings are removed, but i dont see a good way of reattaching it. So beside allowing extra oil out into the catch can, are there any ill effects?

pretty much like you said, extra oil out of the valve cover really, if your catch can is under vacuum, then even more will be coming out.
