Anybody got any pointers on cleaning and adjusting the rear drums on a 2003 Sunfire?

Use brake parts spray cleaner to clean up the entire area to be worked on.
Since it dries leaving no residue, it's the best way to clean and not have to worry about the dust.

Adjusting them isn't that difficult.
What I would recommend is that you buy a Haynes or Chiltons Service manual for the car.
It's the best 20 bucks you've spent because it has step by step instruction on how to do all that you've asked in this thread.
If you'd like a zip file of the actual manual for free, I can provide a link.
