my 05 eco is overheating

i have an 05 cavy with 97xxxx miles and it has just recently started to overheat, i have changed the thermostat and the coolant and it still overheats, jumping up to 197-200 degrees, i think the problem is that the fan isnt kicking on at all other than when i turn my ac on, oh and yes my ac is all good it still blows cold and hot when its suppose to, so how do i go about checking and servicing it further so i may be able to fix it?

Try jumping the relay on the fan and see if it turns on?
Try using a light tester to see if there is power to the fan?

whenever i turn my ac on i have pulled the relay and the fan speed will decrease and increase once i put it back in, and i really have no clue as to how to jump the relay. oh and have noticed that my fan doesnt run after i shut it off like it used to anymore.

Check the coolant temp sensor.

Oh btw 197-200 is normal temp actually. The fan kick on temp is set to 224 degrees so it won't kick in till past 200.

holy @!#$, my car has never gotten up past 197, it has always sat at 195 or lower.

Your fine then with it getting hotter out she will run hotter. Like I said the fan is set to kick on at 224 degrees in hptuners so your good.

Thats what I was thinking. In winter here in FL my average temp (while moving) is around 190. In summer w the AC on and in traffic in goes to maybe 205.

it was one of things where its my first car and that it has never happened before so it freaked me out, but she all good now.
