I am looking on staying with14 or possible 15's, but would like to know what is the widest rim I can go with, also the offset. I am not a fan of the larger rims

No, I would like them to seat inside. I am not sure if I am lowering it or not. If I do, it is not going to be much.
I do not like a small side wall for one (not safe and rough ride) I do not like that look either. Is that alright??
I have 18"x8" wheels. They fit with a little bit of room when locked. The rear is tucked perfectly with the body but the front seems to stick out 1/2" to 1".

but I don't know what the offset is on them at the moment.
Actually lower sidewall handles better because of less sidewall rollover.

ya, as far as that comment about safer having more tire, thats not true at all, its actually much more dangerous to have more sidewall on a tire, those numbers on a tire 235/35/18 the 35 is an aspect ratio, directly relating to the performance of the tires, as well as a simple little detail, ever see a lambo or porsche with big ol truck tires on it? nope not gonna happen, all sports cars come with low profile tires because less sidewall equals less lean angle in the turns and less roll over is always a good thing on a tire, it keeps the tires contact patch under the center of the rim were it belongs allowing your suspension to do its job and make the car corner. If you ever get the chance drive a car with low pros on it then drive your car, gently roll the wheel left and right at around 30 mph you'll feel the car wallow into the right and left turn on the car with higher sidewalls, the low pro car will feel more crisp and inspiring.
Now as for ride comfort you will lose some comfort with low pros as you said, so that much is true, but you could run a 16" wheel with no ill effects its actually a great size for the track as its usually a lighter wheel and they arent as pricey as 18s and up i'd stay away from 14s, but 15's and 16's will make it easier for you to find tires to fit them.
Always remember being different is expensive, be it price, headache finding parts, or just in general putting up with resident know it alls such as myself
lol but good luck and in general you can fit an 8 inch rim under the car with i beleive a 42mm back spacing,
The J's can handle anywhere from a 40mm to a 48mm with a 7" rim the spacing works like this, on a fwd rim the back spacing is how many millimeters from outer edge of the rim to where the actual center of the rim is distanced from that, so positive means its outside that, negative means its inward i beleive, it migth be the other way around. you can also use aftermarket rims for subaru on these cars, so you can seek out japanese wheels which are usually in the 16" range and sometimes as small as 13" in 5x100 bolt patterns.
