Is there a way to customize the stock seats with new covers and so on?
get them reupolstered thats bout all i know
I'm sure you can use spray dye as well.......
But I think it'd be hard to do more than 1 color.
I know it's JUST a Cavalier, and I'm sorry if I hurt your ego.
You can buy covers that go over the existing seats, but they usually end up looking pretty gay. I actually had some decent ones on my Cav, though.

Seat covers can look sweet! Pretty expensive though.

I have these really nice black with blue flame seat covers on my Cavy and they look great.
Go to an automotive upholstry shop and look at the millions of options. A good shop can do anything from re-wrapping with stock-style fabric to changing the entire shape of the seat by re-foaming it and making custom covers.
If you were near the Mesa area of Arizona I'd have a great place to reccommend, it's were I'm taking my seats (out of a 98 Celica GT) to be redone.
I'll post some before and after pick in a few weeks.
