I've done a little searching and I would just like for someone to confirm this.
I have a 2001 4 door cavalier and I'm wanting to do a complete interior change somewhere in the future.
The interior from '00+ are all the same, right? So if I were to get a donor car, I would want '00+?

i dont get what your trying to do.. i get what your saying though.. is your dash cracked? and you just want to replace it? are you trying to swap to a sunfire dash ?
Yes your gonna want to find a 00+ cav there are a few differences between the years the biggest one being the radio location. But your only concern there would be the dash the rest of it for the most part can be pulled from any car. On sedans the headliner and A B and C pillar covers are also different.
