I dont want to install the Apexi myself because I hate wires and will probably F it up so my Friend John is going to do it. However I may not be able to do the GM SC install right away, may be the next day and I will have to drive it home.
My question, can I install the SAFC 2 without say turning it on? What should I do?

The unit will turn on as soon as you turn on your car but it won't really matter. As long as you don't change the correction percentage/factor, your car will be unaffected. I have had mine on for about 3 months now and I just left the fuel correction alone. It really won't hurt anything.

Agreed.
Your SAFC-2 only does what you tell it to do. If you tell it to send more fuel, it will, if you want less fuel, it will do it. It's presets are at 0 when you initially install it. 0 = stock settings, so as long as you don't touch anything, you wont' be effected.
