When its cool out temp gauge stays just a tick below the middle. As its getting hotter out, in stop and go traffic or idling, the needle goes up to in between half and 3/4's then the fan kicks in. When cruising it stays a tick below half. But when I have the A/C on it stays at exactly a tick below half.

It seems pretty normal to me. It happens to my Cavalier anytime the weather here is around or above 90°. Usually when I'm stuck in city traffic at a stop light just idling, I put my car in neutral and it seems to keep the temp gauge from going above the halfway mark.
normal. when your sitting still there is no air coming to the rad which is why the needle moves up. if it goes into the red, then i would be worried

Normal. Around half is the optimal operating temperature.
As mentioned, when you're sitting still no air is flowing through the rad so on a hot day, things heat up. When the ECU decides things are getting too hot, it puts the fan on. The fan draws in enough air to bring the temps down to around half.
When you run the A/C, the fan is turned on to draw air through the condensor. Obviously it also draws air through the rad so the temperature stays around half.
Hell, mine does it in the winter, too. I've come to accept it. If I bust a head gasket, then I'll worry.
Mine stays a little over half all the time, then fan kicks on if it's sitting in place for more than half a minute or so. Of course, my a/c doesn't work, so I don't know if that would help or not

Like others have said, its normal. When I had my sunfire, it did it all the time.
